Roasted Red Pepper and Garlic Coulis

A coulis is a thick pureed vegetable sauce. This one is lovely served as a dipping sauce for both grilled meats and potatoes. Mix it into your next risotto.

Makes about 1½ cups

Takes about 25 minutes

In a food processor or blender, whir all the ingredients together until smooth. Use right away or cover and refrigerate for up to 1 week.
