EGG WHITES 101
Egg whites are most easily whipped in a very clean metal bowl with a pinch of cream of tartar, which promotes stabilization.
SOFT PEAKS
Soft peaks will droop slightly downward from tip of whisk or beater.
STIFF PEAKS
Stiff peaks will stand up tall on their own.
OVERWHIPPED
Overwhipped egg whites will look curdled and separated; if you reach this point, start
over with new whites and clean bowl.
