To give our pancakes complexity and depth, we added malted milk powder to the mix. This product is made from malted barley that has been evaporated and pulverized, and sometimes includes flour or evaporated milk powder. Though it is more commonly used to make milkshakes, we found it added a sweet, nutty flavor to the pancakes made from our Better-Than-the-Box Pancake Mix.
