Gas ovens became widely available in the United States during the first decades of the 20th century. Because these ovens were more expensive than their wood- and coal-fired counterparts, gas companies had to get creative in marketing them. One popular tactic was to develop and promote recipes started in a cold oven, with the hook that consumers could save money in their gas ovens by not paying for “needless” preheating.
