Ingredients:
- 1 1/2 cups salsa
- 1 tablespoon butter, melted
- 6 eggs
- Salt to taste
- Pepper powder to taste
- A few tortillas or tortilla chips to serve
Method:
- Divide the salsa amongst 6 ramekins.
- Drizzle the melted butter all around the inner sides of the ramekins (above the salsa).
- Crack an egg into each ramekin. Cover each ramekin with aluminum foil such that the water from the instant pot does not enter the ramekins.
- Pour a cup of water in the inner pot of the cooker. Place a steamer rack in the pot.
- Place the ramekins over the steamer rack.
- Close the lid. Select Manual option and set the timer for 20 minutes.
- When done, quick release the pressure.
- If you are using tortillas, warm the tortillas and serve the rancheros along with the ramekins. Or serve with tortilla chips.
