Ingredients:
- 6 large eggs, boiled, peeled
- 2 tablespoons olive oil
- 1 1/2 pounds country style ground sausage
Method:
- Divide the sausage into 6 equal portions and shape into a flat round. Place the egg in the center and cover the egg with the sausage from all sides.
- Add oil to the instant cooker and set Sauté option. When oil is heated, place the eggs and cook until brown from all sides. Remove from the cooker and set aside.
- Pour a cup of water in the pot. Place a steamer rack in it and place the Scotch eggs on it.
- Close the lid and select Manual option and set the timer for 6 minutes.
- When done, release pressure with quick release
- Slice into 2 and serve.
