Ingredients:
- 2 cups steel cut oats
- 4 peaches, pitted, chopped
- 2 cups coconut milk
- 4 cups water
- 1 vanilla bean, scraped, use seeds and pod
- Maple syrup to taste
Method:
- Set cooker on Sauté option.
- Add steel cut oats, peaches, coconut milk, water, vanilla seeds, maple syrup, and pods and mix well.
- Close the lid and select Manual option and set the timer for 3 minutes.
- When done, let steam release naturally for 10 minutes after which release remaining pressure.
- Serve warm with milk and some more maple syrup if you desire.
