Ingredients:
- 1 large onion, chopped
- 4 cloves garlic, minced
- 3/4 pound ground turkey sausage
- 2 potatoes, chopped into chunks
- 3 cups kale leaves, chopped
- 1/2 cup almond milk
- 1 teaspoon crushed red pepper
- 7 cups chicken stock
- 1 teaspoon dried thyme
- Salt to taste
- Pepper to taste
- Parmesan cheese, grated, to serve
Method:
- Set the pot on Sauté option. Add onion, garlic and sausage and sauté until brown.
- Add all the ingredients except kale and milk.
- Close lid. Set cooker on Soup option and timer for 25 minutes.
- Let steam release naturally. Add kale.
- Set Sauté option and simmer until kale wilts.
- Ladle into individual soup bowls and serve hot.
- Serve garnished with Parmesan.
