Ingredients:
- 2 pounds frozen lima beans, divided
- 1 medium onion, chopped
- 1 medium carrot, chopped
- 1 smoked ham hock
- 2 cloves garlic, chopped
- 4 cups water
- Salt and pepper to taste
Method:
- Add all the ingredients to the instant pot.
- Close lid and set Soup option.
- When done, remove ham hock and chop it meat into small pieces.
- Blend the rest with an immersion blender.
- Add the ham to the soup. Reheat and serve.
- Ladle into individual soup bowls and serve hot.
