Ingredients:
- 6 large tomatoes, cored, quartered
- 2 cups carrots, peeled, shredded
- 1 large onion, chopped
- 1 1/2 cups fresh spinach, chopped
- 5 cloves garlic, minced
- 2 cups water
- 1/2 cup almond milk or coconut milk
- 1 tablespoon olive oil
- Sea salt to taste
- Pepper powder to taste
Method:
- Add all the ingredients except coconut milk to instant pot.
- Close lid and set on Soup option. When done, let the steam release naturally.
- When done, cool slightly and blend with an immersion blender until smooth.
- Add coconut milk and mix well.
- Reheat and serve. Ladle into individual soup bowls and serve hot.
