- 1 large onion, chopped
- 1 tablespoon onion garlic, sliced
- 2 carrots, peeled, cubed
- 4 red potatoes, rinsed, scrubbed, cubed
- 6 cups kale, hard ribs and stems removed, finely sliced
- 4 stalks celery, chopped
- 10 cups vegetable stock
- 4 teaspoons dried sage
- 4 teaspoons dried thyme
- Salt to taste
- Pepper powder to taste
Method:
- Set Sauté option. Add oil and onions and sauté until translucent. Add garlic and sauté until fragrant.
- Add rest of the ingredients except kale. Set Soup option. When done, let the steam release naturally.
- Add kale and simmer until kale wilts and serve. Ladle into individual soup bowls and serve hot.
