Ingredients:
- 1/2 cup dry cannellini beans, soaked in water
- 1 bay leaf
- 2 cloves garlic, mashed
- 1 tablespoon vinegar
- 1 tablespoon mint, chopped
- 1 tablespoon olive oil
- Salt and pepper to taste
- 1 teaspoon Italian seasoning
Method:
- Add beans along with water, garlic and bay leaf to the instant pot.
- Close lid. Set Manual option and timer for 8 minutes. When done, let the steam release naturally.
- Drain water and transfer into a bowl. Add vinegar, mint, olive oil, salt, pepper and Italian dressing, toss well and serve.
