Ingredients:
- 1 medium head cauliflower, chopped into florets
- 1 medium head broccoli florets
- 3 oranges, peeled, deseeded, thinly sliced
- Juice of an orange
- Zest of an orange, grated
- 1 hot pepper, thinly sliced
- 5 anchovies
- 1 1/2 tablespoons capers
- Salt and pepper to taste
- 1/3 cup extra virgin olive oil
Method:
- Add cauliflower and broccoli to instant pot. Add 1/2-cup water.
- Close lid. Set Manual and timer for 4 minutes. When done, let the steam release naturally.
- Add all the salad ingredients to a bowl. Whisk dressing ingredients and pour over salad. Toss well.
