Ingredients:
- 1 1/2 cups wheat berries, soaked in water overnight, drained
- 3 cups water
- Fresh basil to garnish
- 1 1/2 tablespoons balsamic vinegar
- 1/3 cup raspberry vinegar
- 1 teaspoon Dijon mustard
- 4 tablespoons olive oil
- Salt to taste
- Pepper powder to taste
- 4 green onions, thinly sliced
- 3/4 cup apricots, slivered
- 3/4 cup almonds, toasted
- 1 cup dried blueberries
- 3 tablespoons fresh parsley
Method:
- Place wheat berries in the instant pot and add water.
- Close lid. Set Manual option and timer for 18 minutes. When done, let the steam release naturally.
- Drain and cool.
- Meanwhile, mix together all the ingredients of the dressing and set aside for an hour.
- Pour over wheat berries, toss well and serve garnished with basil.
