Ingredients:
- 1 1/2 pounds raw peanuts with its shell, shelled
- 3 tomatoes, chopped
- 1/3 cup celery, chopped
- 1 large bell pepper, chopped
- 2-3 hot peppers, chopped
- 3/4 cup onions, chopped
- 3 tablespoons olive oil
- 3 tablespoons lemon juice
- Salt and pepper to taste
- 1 bay leaf
Method:
- Add peanuts to instant pot with 2 cups water and bay leaf.
- Close lid. Set Manual option and timer for 20 minutes. When done, let the steam release naturally.
- Drain and place in a bowl. Add rest of the vegetables. Add lemon juice, oil, salt and pepper to a bowl and whisk. Pour over salad and toss well and serve.
