Ingredients:
- 1 1/2 pounds beets, scrubbed, rinsed
- 2 cups water
- 2 teaspoons apple cider vinegar
- 1 1/2 teaspoons sugar
- 2 teaspoons fresh lemon juice
- 1 teaspoon Dijon mustard
- Salt to taste
- Pepper powder to taste
- 1 1/2 tablespoons extra virgin olive oil
- 2 tablespoons walnuts, finely chopped
Method:
- Pour water into the pot. Add beets to it.
- Close lid. Set Manual option and timer for 10 minutes. When done, let the steam release naturally.
- Drain the beets and chop into bite sized pieces and place in a serving bowl.
- To make the dressing: Add all the ingredients of the dressing except oil and walnuts to a small bowl. Whisk well.
- Pour olive oil slowly into the dressing whisking simultaneously.
- Drizzle the dressing over the beets and toss well.
- Sprinkle dill and walnuts and toss again.
