Ingredients:
- 2 sweet potatoes, peeled, cubed
- 1 large onion, diced
- 1 cup red lentils, rinsed
- 1/2 teaspoon garlic powder
- 1/2 teaspoon chipotle chili powder
- 1 teaspoon ground cinnamon
- 4 tablespoons rice vinegar
- 3 cups water
- 2 tablespoons nutritional yeast
- Salt to taste
Method:
- Add all the ingredients to the instant pot.
- Stir, close lid. Set Manual option and timer for 5 minutes. When done, let the steam release naturally.
- Uncover, stir and serve warm.
