Ingredients:
- 2 cups long grain white rice
- 1/2 cup green bell pepper
- 1/2 cup onion, diced
- 2 1/2 cups chicken broth or vegetable broth
- 1 cup salsa
- 2 tablespoons olive oil
- Salt to taste
Method:
- Select Sauté option.
- Add oil to the instant pot. When the oil is heated, add onions and sauté until translucent.
- Add rice and sauté until the rice turns out to be opaque.
- Add broth and salsa. Mix well.
- Close lid of the pressure cooker. Set Manual option and timer for 4 minutes.
- Let the pressure be released naturally for about 5 minutes. Quick release steam and serve.
