Ingredients:
- 1 1/2 cups basmati rice, rinsed
- 2 1/2 cups water
- 3/4 cup mixed frozen vegetables
- 1 onion, sliced
- 1 bay leaf
- 2 tablespoons mixed whole spices (cumin, pepper, cinnamon, cardamom)
- 2 teaspoon salt
- 1 teaspoon ginger, minced
- 1 teaspoon garlic, minced
- 2 tablespoons ghee
Method:
- Select Sauté option.
- Add ghee to the instant pot. When ghee is heated, add whole spices, bay leaf, onions and sauté until translucent. Add ginger and garlic and sauté until fragrant.
- Add rice and sauté until the rice turns out to be opaque.
- Add vegetables and water. Mix well.
- Close the lid. Set Rice option. Open the lid when the rice cycle is completed.
- Fluff with a fork and serve.
