Ingredients:
- 1/2 tablespoon butter
- 1 small onion, chopped
- 1 stalk celery, chopped
- 1 medium carrot, chopped
- 1 cup long grain white rice, washed and drained
- 7 ounce vegetable broth or chicken broth
- 10 tablespoons water
- Salt to taste
- 1/2 cup frozen peas, thawed
- 1 tablespoon parsley, finely chopped
- 1/4 cup almonds, sliced, toasted
Method:
- Select Sauté option. Add butter. When the butter melts, add onions, celery and carrots. Sauté until translucent.
- Add and rice to the pot. Mix well until the rice is well coated and opaque. Add water, salt and broth.
- Close lid. Select Manual option and timer for 7 minutes.
- Let the steam go off naturally for 5 minutes and then release with quick release.
- Fluff the rice with a fork. Add peas, parsley, and almonds. Mix and serve hot immediately.
