Ingredients:
- 1 cup wild rice
- 2 tablespoons olive oil
- 3 bratwurst
- 2 cups water
- 4 baby carrots, sliced
- 1 turnip, cubed
- 1 medium red bell pepper, chopped
- 1/2 cup corn kernels
- 1 cup collard greens, chopped
- Salt and pepper to taste
Method:
- Add wild rice, water and 1/2 tablespoon oil to the instant pot.
- Close lid. Select Manual option and timer for 30 minutes. When done, let the steam release naturally.
- When done, transfer into a bowl.
- Clean the pot and add 1-tablespoon oil to it. Set Sauté option. Add all the vegetables except greens to it and sauté until tender. Transfer into the bowl of rice.
- Add 1/2-tablespoon oil and collard greens to the pot and sauté until it wilts. Transfer into rice bowl.
- Add bratwursts to the pot and cook until done. Remove on the chopping board and slice it. Add to the rice bowl, mix and serve.
