Ingredients:
- 2 cups long grain rice, rinsed
- 1 large onion, thinly sliced
- 3 cups spinach, thinly sliced
- 2 large carrots, grated
- 2 tablespoons olive oil
- 1 teaspoon cumin seeds
- 2 green chilies, slit
- 1/2 teaspoon red chili flakes
- 2 teaspoons salt
- 3 1/2 cups water
Method:
- Select Sauté option. Add oil to the instant pot. Add cumin. When it crackles, add onions and sauté until translucent.
- Add rest of the ingredients except salt and water. Sauté for 3 minutes.
- Add salt and water and stir.
- Close lid and select Rice option.
- When the rice cycle is completed, open the lid, fluff with a fork and serve.
