Ingredients:
- 3/4 pound penne pasta
- 1 1/2 pounds smoked sausage, sliced
- 3 cups fresh spinach, sliced
- 4 cloves garlic, minced
- 1 onion, chopped
- 2 cups mushrooms, sliced
- 3cups chicken stock
- 3/4 pound penne pasta
- 1 1/2 jars (10 ounces each) roasted red peppers, with its liquid
- 3/4 cup parmesan cheese
- 3 cups Monterey Jack cheese
- Salt to taste
- Pepper powder to taste
Method:
- Select Sauté option. Add onion, mushroom, sausage, and garlic to instant pot and sauté until translucent. Add meat. Cook until brown.
- Add a little stock and scrape the bottom to remove any browned bits that may be stuck to the pot.
- Add rest of the ingredients except cheese.
- Close the lid. Set Meat option.
- When done, quick release excess pressure. Add cheese, stir and serve.
