Ingredients:
- 1 jar (24 ounce) Italian tomato sauce
- 5 thick lasagna noodles, broken
- 3 cups vegetables of your choice, chopped
- 12 ounce part skim ricotta cheese
- 1 cup Mozzarella cheese, shredded
- 1/2 cup parmesan cheese, shredded
- 2 tablespoons fresh parsley
- Cooking spray
Method:
- Spray instant pot with cooking spray.
- Spread about 1/2 cup of tomato sauce at the bottom of the cooker.
- Lay about 1/3 of the broken lasagna sheets at the bottom of the cooker.
- Make layers by spreading about 1/3 of each of the following; vegetables, sauce, ricotta cheese, mozzarella cheese and lasagna.
- Repeat above step
- Finally spread a thin layer of sauce and top with Parmesan cheese.
- Close lid. Set on slow cook option and timer for 2 hours.
- When done, do not uncover, let it cool down for about an hour.
- Sprinkle parsley over it. Slice and serve.
