Ingredients:
- 1 1/2 pound chicken, fresh or frozen, de skinned
- 1/2 cup barbeque sauce
- 1 cup pineapples, fresh or canned, diced
- 1/2 cup coconut milk
- 1/2 tablespoon red chili flakes or to taste
- Juice of a lime for garnish
Method:
- Mix together in a bowl, barbecue sauce, milk, and chili flakes.
- Place the pineapple at the bottom of pot.
- Dip the chicken pieces in the sauce mixture and place above the pineapple layer. Pour the sauce over the chicken pieces if remaining.
- Close the lid. Set Manual option and timer for 10 minutes.
- Let the steam go off naturally.
- Remove the chicken pieces from the pot and keep aside.
- Select Sauté option and simmer until the liquid thickens.
- Now add the chicken pieces back to the pot. Mix well. Heat thoroughly.
- Serve hot garnished with lime juice.
