Ingredients:
- 1 chicken breast
- 3 cups chicken broth
- 1 can (15 ounce) Great Northern beans, drained
- 1 teaspoon ground cumin
- 1 cup salsa
- 1 avocado, peeled, pitted, chopped
- 2 tablespoons fresh cilantro
Method:
- Add all the ingredients except avocado and cilantro to instant pot.
- Close lid. Select Poultry option and timer for 8 minutes. When done, let the steam release naturally.
- Remove the chicken breast and set aside on a plate. When it is cool enough to handle, shred the chicken using a pair of forks.
- Add it back to the pot. Mix well. Reheat.
- Serve with avocados and garnished with cilantro
