Ingredients:
- 1 1/2 pounds beef brisket or chuck roast or boneless short ribs, cut into 1 1/2 inch cubes
- 1/2 tablespoon coconut oil
- 1 medium sweet potato, peeled, cubed
- 1large carrot, peeled, cut into 2 inch pieces
- 1 small onion, chopped
- 3/4 cup full fat coconut milk + extra if needed
- 1 tablespoon apple juice
- 1 tablespoon coconut aminos
- 1 tablespoon Thai curry paste
- 1/2 tablespoon fish sauce
- 2 scallions, chopped
- 2 tablespoons fresh cilantro, chopped
Method:
- Season beef with salt.
- Select Sauté option. Add oil and curry paste and sauté until fragrant.
- Add rest of the ingredients except scallions and cilantro.
- Close the lid. Select Manual option and set the timer for 35 minutes. When done, let the steam release naturally.
- Garnish with scallions and cilantro leaves.
- Serve over rice.
