Ingredients:
- 2 pounds ribs, trimmed of fat, chopped
- 1 onion, sliced
- 1/2 teaspoon ginger, minced
- 2 cloves garlic, sliced
- 3 tablespoons rice wine vinegar
- 2 tablespoons ketchup
- 1 teaspoon fish sauce
- 2 tablespoons soy sauce
- 10 ounces canned pineapple
- 1/4 teaspoon smoked paprika
- 1/2 teaspoon chili powder
- Salt and pepper to taste
- 1/2 teaspoon coriander powder
- Water as required
- 1 tablespoon cornstarch mixed with a little water
Method:
- Select Sauté option. Add oil and onions to the pot and sauté until translucent.
- Add rest of the ingredients except cornstarch.
- Close lid. Set Stew option and timer for 12 minutes. When done, let the steam release naturally.
- Add cornstarch and simmer until thick using Sauté option.
- Open the lid, stir and serve.
