Ingredients:
- 3 pounds pork loin, boneless
- 8 medium potatoes, peeled, cubed
- 6 medium carrots, peeled, cubed
- 4 tablespoons olive oil
- 2 cloves garlic, crushed
- 1 teaspoon dried thyme or 1 tablespoon fresh thyme
- 1 teaspoon dried basil or 1 tablespoon fresh basil
- 1/2 teaspoon dried rosemary
- 1/4 teaspoon ground nutmeg
- 2 tablespoons fresh parsley, chopped
- 1 cup chicken broth
Method:
- Select Sauté option. Add oil and pork to the pot and sauté until brown.
- Add rest of the ingredients and stir.
- Close the lid and select Manual option and set the timer for 40 minutes. When done, let the steam release naturally.
- Stir and serve.
