Ingredients:
- 1 1/2 pounds ground turkey
- 1 large yellow onion, diced
- 3 green bell peppers, seeded, diced
- 3 fresh cayenne peppers, chopped
- 1 1/2 cans (15 ounce each) kidney beans
- 1 1/2 cans (15 ounce each) fire roasted diced tomatoes
- 1 1/2 tablespoons olive oil
- 1 1/2 teaspoons ground cumin
- 1 1/2 teaspoons dried oregano
- 6 cloves garlic, chopped
- 6 tablespoons hot sauce or to taste
- 1 1/2 cups Monterey Jack cheese, grated
- 1/4 cup fresh cilantro, chopped
Method:
- Select Sauté option. Add 1-tablespoon oil, onions, garlic and peppers to the pot and sauté until onions are translucent.
- Add cumin and oregano and sauté until fragrant.
- Add turkey. Break it while it cooks.
- Add rest of the ingredients except cheese and cilantro.
- Close lid. Select Poultry option and timer for 25 minutes. When done, let the steam release naturally.
- Garnish with cheese and cilantro. Serve with rice.
