Ingredients:
- 1 1/2 pounds boneless leg of lamb
- 4 cloves garlic, peeled
- Salt and pepper to taste
- 1/4 cup dry white wine
- Zest of 1/2 lemon, grated
- 1 tablespoon olive oil
- 1 tablespoon fresh rosemary, chopped
Method:
- Add garlic, zest, rosemary, oil, salt and pepper to a mortar and pestle and grind to a paste and rub over the lamb and marinate.
- Set Sauté option. Add oil, lamb and garlic and cook until the lamb is brown.
- Add rest of the ingredients.
- Close the lid. Select Slow cook option and set the timer for 2 hours. When done, let the steam release naturally.
