Ingredients:
- 2 cups dry mung beans, soaked in water for 7 - 8 hours, drained
- 1 1/2 cups water
- 1 tablespoon olive oil
- 4 cloves garlic, minced
- 2 cups tomatoes, diced
- 2 tablespoons lime juice
- 5 cups fresh baby spinach
- 1 teaspoon salt or to taste
- 1 teaspoon curry powder
- 1/2 teaspoon red chili powder
Method:
- Set Sauté option. Add oil, onions and garlic until the onions are translucent. Add tomatoes and cook for a couple of minutes.
- Add salt and mung beans. Mix well and add water.
- Close the lid. Set Manual option and set the timer for 7 - 8 minutes. When done, let the steam release naturally.
- Add spinach, chili powder and curry powder. Stir and keep it covered for 5 minutes.
- Add lemon juice. Mix well and serve.
