Ingredients:
- 2 cups brown lentils, rinsed, soaked in water for 2 hours
- 4 cloves garlic, minced
- 2 onions, chopped
- 3 cups water
- 2 teaspoons each ground coriander, cumin and ancho chili powder
- 6 tablespoons tomato paste
- Lemon juice to serve
- Salt to taste
Method:
- Set Sauté option. Add oil, garlic and onion and sauté until translucent.
- Add remaining ingredients except tomato paste and stir.
- Add tomato paste on top but do not stir.
- Close lid. Select Manual option and timer for 7 minutes. When done, let the steam release naturally.
- Add lemon juice, stir and serve.
