Ingredients:
- 2 cups coarse polenta
- 1 cup onions, minced
- 2/3 cup sun dried tomatoes, finely chopped
- 2 tablespoons garlic, minced
- 2 bay leaves
- Salt and cayenne to taste
- 1/2 teaspoon dried rosemary
- 1 teaspoon dried oregano
- 2 tablespoons each basil and parsley, chopped
Method:
- Set Sauté option. Add oil, garlic and onion and sauté until translucent.
- Add remaining ingredients except polenta and stir.
- Sprinkle polenta on top but do not stir.
- Close lid. Select Manual option and timer for 5 minutes. Let pressure release naturally for 10 minutes. Quick release excess pressure.
- Discard bay leaf and stir. Simmer if it is watery.
