Ingredients:
- 2 large artichokes, rinsed, trimmed
- 2 cloves garlic, minced
- 1 teaspoon balsamic vinegar
- 1 tablespoon lemon juice
- 1 teaspoon dried oregano
- Salt and pepper to taste
Method:
- Set Steam option. Pour 2 cups water inside the instant pot. Place steamer rack in it.
- Place artichokes on the steamer rack with its bottom up.
- Close the lid and select Steam option and set the timer for 8 minute.
- Whisk together rest of the ingredients and set aside.
- Remove artichokes and cook. Cut each into 2 halves. Remove the center purple leaf and scrape artichoke.
- Pour dressing over it and let it marinate for 3-4 hours.
- Grill for 3-4 minutes and serve.
