Ingredients:
- 1 1/2 cans tuna fish in water, drained
- 1 onion, chopped
- 4 teaspoons olive oil
- 1 1/2 cans (14 ounces each) diced tomatoes with basil, garlic, and oregano with its liquid
- Salt and pepper to taste
- 2 cups water
- 12 ounces dry, wide egg noodles
- 1 1/2 jars marinated artichoke hearts, drain most of the liquid, chopped
- 1/2 cup feta, crumbled
- Chopped parsley to garnish
Method:
- Set Sauté option. Add oil. When oil is heated, add onion and sauté until translucent.
- Add noodles, tomatoes, water, salt and pepper.
- Close lid. Select Soup option and timer for 10 minutes.
- Quick release excess pressure.
- Add tuna and artichokes to the pot. Simmer using Sauté option for 4 minutes.
- Garnish with feta and parsley and serve.
