Ingredients:
- 2 cups pearl barley, rinsed
- 2 bell peppers, chopped
- 4 cloves garlic, minced
- 2 large carrots, chopped
- 4 celery stalks, chopped
- 2 onions chopped
- 2 cups mushrooms
- 3 cups vegetable stock
- 3 cups eight vegetable juice
- 1/2 cup walnuts, chopped
- Salt to taste
Method:
- Add barley, bell peppers, garlic, carrots, celery, onions, mushrooms, vegetable stock, eight vegetable juice and salt to the instant pot. Stir.
- Close the lid. Select Manual option and set the timer for 25 minutes. When done, let the steam release naturally.
