Ingredients:
- 1 cup Arborio rice
- 1 medium onion, chopped
- 2 cloves garlic
- 4 ounces pumpkin puree
- 2 cups chicken or vegetable broth
- 1/4 cup heavy cream
- 2 teaspoons pumpkin pie spice
- 1 tablespoon olive oil
- Salt to taste
- Pepper powder to taste
Method:
- Select Sauté option. Add oil to instant pot. When oil is heated, add onion and garlic and sauté until translucent.
- Add rice and sauté for a couple of minutes. Add pumpkin puree, broth, pumpkin pie spice, salt and pepper and stir.
- Close the lid. Select Rice option. When the rice cycle is completed, open the lid. Add cream and stir and serve immediately.
