Ingredients:
- 3 cups Arborio rice, rinsed
- 6 cups vegetable broth
- 1 large onion, thinly sliced
- 4 cloves garlic, minced
- 1 1/2 pounds mushrooms, sliced
- 3 cups baby spinach
- 3 chicken thighs, sliced
- 1/4 cup butter
- 1/4 cup olive oil
- 3/4 cup dry white wine
- 3 tablespoons Krush spice mix or Italian spice blend
- Salt to taste
Method:
- Select Sauté option. Add oil and half the butter to the pot. When butter melts, add onions and garlic. Sauté until the onions are translucent.
- Add chicken and sauté until brown. Add krush mix and sauté until fragrant.
- Add mushroom and rice to the pot. Mix well until the rice is well coated with the oil. Add white wine. Cook for a couple of minutes and add broth and salt.
- Close the lid. Select Rice option. When the rice cycle is completed, open the lid.
- Add remaining butter and cheese. Mix well and cover for a couple of minutes before serving.
