Ingredients:
- 1 1/2 cups dry lentils, soaked in water overnight, drained
- 1 1/2 cups Arborio rice
- 1 large onion, chopped
- 5 cups vegetable broth
- 5 cloves garlic, minced
- 2 tablespoons parsley, chopped
- 2 celery stalks, chopped
- 1 tablespoon olive oil
- Salt to taste
- Pepper powder to taste
Method:
- Select Sauté option. Add oil to the instant pot. When oil is heated, add onions and garlic sauté until translucent.
- Add rice and sauté for a couple of minutes. Add salt, pepper, celery, and parsley
- Close the lid. Select Manual option and set the timer for 5 minutes. When done, let the steam release naturally.
