Ingredients:
- 1 pound bone-in chicken pieces, skinless
- 1/2 cup jasmine rice
- 4 cups water
- 4 teaspoons ginger, grated
- 4 cloves garlic, crushed
- 2 shiitake mushrooms, sliced into thin strips
- 3 1/2 cups water
- Salt to taste
- 2 green onions, sliced
- 1/2 tablespoon soy sauce
- 3 tablespoons peanuts, chopped
- 2 tablespoons cilantro, chopped
- 2 teaspoons sesame oil, toasted
Method:
- Place rice at the bottom of instant pot.
- Add rest of the jook ingredients to the pot.
- Stir and close lid. Set Porridge option and timer for 20 minutes. When done, let the steam release naturally.
- Remove chicken pieces. When cool enough to handle, shred with forks. Add it back to the pot and stir. Reheat using Sauté option.
- Serve in bowls topped with green onions, peanuts, and cilantro. Drizzle soy sauce and sesame oil.
