Ingredients:
- 2 heads cauliflower, chopped
- 4 garlic cloves, minced
- 2 onions, chopped
- 4 carrots, peeled, chopped
- 4 celery stalks, chopped
- 8 cups chicken stock
- 2 cups coconut milk
- 2 1/2 teaspoons ground cumin
- 1 teaspoon ground turmeric
- 1 teaspoon ground coriander
- Fresh dill, to taste (optional)
- 8 bacon slices, cooked, crumbled
- 2 tablespoons olive oil
- Sea salt to taste
- Freshly ground black pepper to taste
Method:
- Set Sauté option. Add oil. When the oil is heated, add onions, garlic, carrots, and celery and sauté until the onions are translucent.
- Add cauliflower and sauté for about 4-5 minutes.
- Add stock, turmeric, cumin, coriander powders and coconut milk. Mix well.
- Close the lid. Select Soup option. When soup cycle is complete, open the lid.
- Add salt and pepper and stir.
- Garnish with bacon and dill and serve.
