Ingredients:
- For tacos:
- 2 pounds pork shoulder, trimmed, cut into small cubes
- 1 tablespoon olive oil
- 1/2 teaspoon marjoram
- Salt and pepper to taste
- 2 tablespoons water
- 4 tablespoons lemon juice
- Taco shells as required
- Lettuce, sliced
- 1 large tomato, chopped
- 1/2 small cucumber, peeled, shredded
- 1/2 tablespoon lemon juice
- 1/2 cup plain Greek yogurt
- 1 clove garlic, minced
- Salt and pepper to taste
- 1/2 teaspoon dried dill
Method:
- Mix together oil, salt, pepper and marjoram and rub over the pork.
- Ad water and lemon juice to the instant pot. Place pork in it.
- Close the lid. Select Meat option and set the timer for 25 minutes. When done, let the steam release naturally.
- Meanwhile make Tzatziki sauce as follows: Sprinkle a little salt over the cucumber. Mix and place it in a strainer to drain excess water in the cucumber.
- Mix together cucumber and rest of the ingredients and set aside.
- When done, select Sauté option and simmer until dry. Remove meatÂ
- Fill it in the taco shells. Also fill in tomatoes and lettuce. Serve with sauce.
