Ingredients:
- 9 medium potatoes, peeled, cut into 1/8 inch thick slices
- 1/2 cup butter, divided
- 1 1/2 cups chicken broth
- 1 large onion, copped
- 3/4 cup sour cream
- Salt and pepper to taste
- 1 1/2 cups Monterey Jack cheese
- 1 1/2 cups bread crumbs, preferably panko bread crumbs
Method:
- Set Sauté option. Add half the butter to the instant pot. Add onions and sauté until tender.
- Add broth, salt and pepper.
- Place steamer basket in the pot. Place sliced potatoes in it.
- Close lid. Select Manual option and set the timer for 5 minutes. When done, let the steam release naturally.
- Transfer the potatoes into a greased ovenproof dish.
- Add cream and cheese to the liquid in the instant pot.
- Pour this mixture over the potatoes in the dish. Mix lightly. Melt the remaining butter and pour over the potatoes.
- Sprinkle breadcrumbs and broil until golden brown in an oven.
