Ingredients:
- 1 large onion, chopped
- 4 large tomatoes, chopped
- 4 medium potatoes, peeled, cubed
- 1 small head cauliflower, chopped into florets
- 1 cup frozen peas
- 1 large green bell pepper, chopped
- 2 tablespoons salted butter + extra for buns
- 2 tablespoons pav Bhaji masala (Indian spice blend)
- 1 teaspoon salt or more if required
- 1/2 teaspoon ginger paste
- 1 1/2 teaspoons garlic paste
- 1/2 teaspoon chili powder
- Pav or small buns to serve, slit
- 1 onion, minced to serve
- 1 lemon, chopped into wedges
- 2 tablespoons cilantro, chopped
Method:
- Select Sauté option. Add 2 tablespoons butter. When butter melts, add onions and sauté until translucent. Add ginger paste, garlic paste and sauté until fragrant.
- Add bell pepper and tomatoes and sauté for 2-3 minutes. Add pav Bhaji masala and chili powder
- Add cauliflower, potatoes, peas, salt and a cup of water. Stir.
- Close lid. Set Manual option and timer for 8 minutes.
- Let the steam release naturally.
- Open the lid and mash the contents with a potato masher. Keep warm until use.
- Place a nonstick pan over medium heat. Lightly apply butter on the slit buns and place it in the pan. Cook until the bottom side is golden brown. Flip sides and cook the other side too.
- Place the buns on a plate. Place some of the Bhaji (mashed vegetables) on the side. Sprinkle minced onions and cilantro. Add a small blob of butter and serve.
