Ingredients:
- 2 cups Arborio rice
- 2 cans light coconut milk
- 2/3 cup brown sugar
- 3 cups water
- 1 cup half and half
- 1/4 teaspoon salt
- 2 ripe mangoes, peeled, cubed
- 2 teaspoons vanilla
- 1/2 cup almonds, chopped
- 1/2 cup shredded coconut
Method:
- Add rice, water, coconut milk, brown sugar and salt to the instant pot. Stir.
- Close the lid. Select Manual option and set the timer for 8 minutes. When done, let the steam release naturally.
- Add rest of the ingredients. Stir and serve.
