Ingredients:
- 1 1/2 cups all purpose flour
- 6 tablespoons cocoa
- 9 ounces melted dark chocolate
- 1 1/2 tablespoons baking powder
- 3 eggs
- 1/2 teaspoon salt
- 1 1/4 cups brown sugar
- 3/4 cup heavy cream
- 3/4 cup butter at room temperature
- 1 1/2 teaspoons vanilla
- 1 1/2 teaspoons peppermint candy, finely ground + extra for topping
- For glaze:
- 1 1/2 cup chocolate chips, semi-sweet
- 3/4 cup heavy cream
Method:
- Beat butter and sugar in a bowl until sugar dissolves. Add an egg at a time and a little flour at a time and mix until well combined.
- Add rest of the ingredients and mix into a smooth batter.
- Grease a heatproof pan that is smaller than the instant pot and pour the batter into it. Cover with foil.
- Pour 2 cups water in the instant pot and place a trivet in it. Place the pan over it.
- Close lid. Set Soup option and timer for 10 minutes.
- When done, remove the pan from the pot. Discard water.
- For glaze: Add cream to the instant pot. Set Sauté option and bring to a boil. Switch off the pot and add chocolate chips. Stir until it melts.
- When the pudding is completely cooled, invert on to a plate. Pour glaze over the pudding. Sprinkle peppermint candy powder over it and serve.
