Ingredients:
- 4 cups red carrots, grated
- 1 1/2 cups milk
- 1/2 cup sugar
- 3 tablespoons ghee
- 20 cashew nuts, chop each into 3-4 pieces
- 4 tablespoons raisins
- 1/2 teaspoon ground cardamom
Method:
- Add 1 tablespoon of ghee to the instant pot. Add raisins, sauté until they puff up. Remove and keep aside. Add cashew, sauté until light brown, remove and keep aside.
- Add the remaining ghee to the pot. Add carrots and sauté for 3-4 minutes. Add milk and stir.
- Close the lid. Select Manual option and set the timer for 10 minutes. When done, let the steam release naturally.
- When done, open the lid.
- Set Sauté option Simmer until the liquid in the cooker dries up. Stir on and off.
- Now add sugar and continue cooking until the sugar is melted and the pudding is thick.
- Add the cardamom, roasted cashew, and raisins and cook for a few seconds more.
- Serve hot or warm but not cold.
