Ingredients:
- 10 peaches
- 4 tablespoons butter, melted
- 1/2 cup maple sugar
- 1/2 cup cassava flour
- 2 tablespoons finely chopped nuts (almonds or walnuts)
- 1 teaspoon ground cinnamon
- 1/8 teaspoon salt
- 1 teaspoon almond extract
- 2 cups water
Method:
- Slice the top of the peach and discard it. Carefully remove the pits using a knife
- Mix together butter, flour, cinnamon, 1/2 teaspoon almond extract and salt.
- Stuff this mixture into each peach.
- Place the filled in the instant pot. Pour water and 1/2 teaspoon almond extract into the instant pot. Place a trivet.
- Place peaches in a heatproof bowl over the trivet.
- Close the lid. Select Manual option and set the timer for 3 minutes.
- Quick release excess steam.
- Cool and serve with vanilla ice cream.
