Substitutions

If you are allergic, don’t like the taste of an ingredient, or can’t have certain ingredients included in this book, here’s a list of suggestions for substitute options:
• Apples and pears are interchangeable. Other options are red grapes, cherries, blackberries, or blueberries.
• Arugula can be replaced by spinach, kale, or watercress.
• Instead of carrots, you can go with sweet potatoes or yams, pumpkin, or parsnip.
• Use basil or parsley in place of cilantro.
• Grapefruit can be replaced with clementines, oranges, tangerines, or blood oranges.
